December is a month of celebration, it’s full of friend get together’s, family suppers, work events and CHRISTMAS! If you’re like me then you like to bring a little something something to each gathering….and I’m not talking the too much spiked cider, off key karaokeing something something. I’m talking delicious treats, yummy baked goods, and perfect little finger food. Whether you’re bringing it as a thank you for hosting or setting it out as a welcome to our home, these bite sized Rolo Pretzels will be a definite crowd pleaser.
I definitely can’t take the credit for being the genius behind this recipe but I am sure glad I stumbled on it! They are the perfect treat to make it you’re in a time crunch and the ingredients are definitely not too tricky to find.
- Packs of Rolo’s (I usually get a 2-4 packs from WalMart – cheaper than buying them individually!)
- Pretzels – I like mine salted
Now, you can use any pretzel shape you like. For this go round I used Pretzel chips that we had on hand from Costco. They are already my favourite snack, so why not enhance my love for them even more?
Set your oven to 350 degrees. Lay your pretzels out in a single layer on a parchment lined cookie sheet.
Place 1 Rolo per pretzel until you run out of Rolo’s. Put your tray in the oven and only bake them for 4 minutes. If you heat them much longer, your caramel will be a runny mess.
Once removed from the oven take your pecans and start placing them on the Rolo’s, gently pressing down. This will flatten the Rolo and let the pecan stick to it and the pretzel.
Now I usually stick them in the freezer for a quick 5 minute freeze to harden up. This is only because I’m super impatient and I love eating them frozen! You could let them harden on their own, or you could even eat them while still warm and gooey, totally your call.
You’ll find that it’s hard to just have one or two, so don’t be shy about doubling your batch! The sweet caramel and saltiness of the pretzel are like heaven in your mouth. You’ll definitely win the crowd over whenever you bring these!
