Saskatoon Berry Cobbler

So, apparently this is becoming a foodie blog. Just kidding, I’m just on a baking kick right now! Ever go through those? They don’t last long, but holy Hannah are they ever productive! 

Over the weekend we picked some insanely delicious Saskatoon Berries & by we I mean myself. What is a Saskatoon Berry? Google states that they are a berry (no kidding) similar in taste and shape to a blueberry, yet with a distinct ‘wild’ flavour to them. I think they’re delicious. They are native to the Canadian prairies (see we’re more than just producers of wheat), BC, and the NorthWestern US. Fact of the day, the city of Saskatoon was named after the Saskatoon Berry. 

  
As kids we would go picking with my grandma Terry in blistering hot weather with full on jeans and long sleeve shirts (you didn’t want to be sucked alive by mosquito’s) and come back with bucketfuls. She would wash them and we would eat them by the bowlful with cream and a touch of sugar. It was heaven & so worth the heatstroke! 

Enough with the story telling though, here’s what you came for. The most insanely delicious Saskatoon Berry Cobbler any person could ask for. 

  

Saskatoon Berry Cobbler 

 
For the filling: 

  • 3 cups Saskatoon Berries washed & ready to go
  • 1/4 cup sugar
  • 1 1/2 tsp cornstarch
  • 1/4 cup water

For the crumble topping: 

  • 1 cup flour
  • 1/2 cup rolled oats
  • 3 Tbsp sugar
  • 3 Tbsp Raw sugar
  • 1 1/2 tsp baking powder 
  • 1 1/2 sticks of butter (melted)

Heat your oven to 350 degrees. 

Mix your berries, sugar, cornstarch & water. Transfer to a shallow baking dish. 

In a seperate bowl mix your flour, oats, sugars & baking powder. Pour in your melted butter and mix until it starts to clump and is well combined. 

Spread your crumble topping over the Berry mixture until it is evenly spread out. 

Bake for 45 mins or until top is golden brown and the Berry juice is bubbling on the sides of the dish. 

Serve with a scoop of vanilla ice cream & try not to eat the whole dish. Honestly, it’ll be hard to practice that much self control. The smell alone is enough to make anyone ‘s mouth water. Once you see that vanilla ice cream melting all over…. Sigh, it’s pretty great!
